• Skins Lady tempts pork lovers’ palates across McDuffie

People in McDuffie County have a love affair with pork and a Dearing woman has turned the passion for pork skins and pork rinds into an enterprise.
Kemlyn Herrington, known as "The Skins Lady”, fires up two large, cast iron wash pots and heats up the oils each Tuesday on her front porch. She washes, cuts up and seasons a large quantity of skins she receives from a local packing house to cook.
"Skins are from the hog; it is the skin from the whole hog and we take them and cook them until they are cracklin' and people around here enjoy eating them," she said. "People love them because they are crunchy and have a good flavor," she added.
